Вино, иконы и пироги: новинки в реестре культурного наследия Кипра

Организация ЮНЕСКО внесла еще девять кипрских традиций в свой перечень нематериального культурного наследия. Среди них рецепты кипрских блюд и вина, региональные обычаи, иконописная техника.

«В дополнение к сотням археологических памятников, культурный ландшафт Кипра включает в себя богатство традиций и обычаев, которые передаются из поколения в поколение», – сказано в официальном заявлении ЮНЕСКО. Эти живые традиции названы «неотъемлемой частью нематериального культурного наследия Кипра». Их внесение в список ЮНЕСКО в сотрудничестве с правительственными учреждениями, местными общинами, культурными организациями и другими заинтересованными сторонами было предпринято для фиксации и сохранения. Заявки на включение той или иной традиции в реестр подавали местные власти, затем их оценивал специальный комитет, состоящий из ученых и должностных лиц ЮНЕСКО на Кипре.

В перечень нематериального культурного наследия ЮНЕСКО были включены:
– традиция изготовления коммандарии в кипрских деревнях,
– традиционная диета и обычаи Ризокарпасо,
– рецепт десерта «кайканас» из селения Килани,
– рецепт десерта «ципопита» из селения Лефконико и близлежащих деревень долины Месаория (Гипсу, Перистеронопиги, Милия),
– знания и практики, связанные с культивацией и применением местных традиционных сортов семян,
– традиционные повивальные практики,
– текстиль из селения Лефконико,
– традиция византийской, поствизантийской и современной иконописи (переносные иконы, фрески, мозаики, миниатюры и гравюры),
– практика изготовления деревянных лотков для замеса теста.

Чтобы дать своим читателям возможность приобщиться к кипрским традициям, «Вестник Кипра» публикует рецепты двух традиционных кипрских десертов, включенных в реестр ЮНЕСКО.

Ципопита

Название происходит от слова «ципа», которое означает масло из овечьего молока.

Вам понадобятся:

– для теста:
4 чашки муки (примерно 600 гр),
½ чайной ложки соли,
1 столовая ложка лимонного сока,
⅓ чашки оливкового масла,
1 чашка + 2 столовой ложки воды;

– для начинки:
100 гр овечьего масла (при отсутствии традиционной кипрской ципы можно взять критские сливки под названием «стака» или простое сливочное масло),
100 гр крупно порубленного миндаля,
1 чайная ложка корицы;

– для сиропа:
1,5 чашки воды,
2 чашки сахара,
1 палочка корицы,
сок половины лимона,
лимонная цедра по вкусу.

Приготовление

– Смешать муку и соль. Сделать в центре углубление, добавить чашку воды комнатной температуры, оливковое масло и лимон. Все перемешать до образования теста. Если получается слишком рассыпчатое тесто, добавить еще немного воды.

– Присыпать тесто мукой и оставить на 30 минут. Пока можно приготовить сироп и дать ему остыть.

– Для этого в кастрюлю положить все ингредиенты для сиропа и варить их 3-4 минуты. Снять с огня и остудить.

– Миндаль смешать с 1 чайной ложкой корицы.

– Смазать маслом круглую форму среднего размера (в кипрских деревнях для этого используют металлические сковороды).

– Если вы используете сливочное масло из коровьего молока, поставьте форму в духовку или на огонь и дайте маслу растаять, но ни в коем случае не передержите его и не дайте ему подгореть. Овечье масло не обязательно растапливать.

– Присыпать рабочую поверхность мукой, разделить тесто на шесть частей. Раскатать каждый кусок теста.

– Каждый лист смазать маслом и посыпать миндалем.

– Свернуть каждый лист в рулон, потом взять получившийся рулон за два конца и слегка закрутить их в противоположные стороны. Затем свернуть рулон спиралью и положить в центр формы или сковороды, которую вы смазали маслом.

– Проделать ту же процедуру с каждым рулоном теста. У вас должна получиться спираль из теста.

– Если у вас осталось масло, смажьте им получившуюся «улитку».

– Разогреть духовку до 180 градусов, выпекать ципопиту 45-50 минут.

– Готовый пирог полить остывшим сиропом.

 

Кайканас

Вам понадобятся:

– 3 чашки тертого халлуми,
– 4 яйца,
– 1 чашка виноградного сиропа («эпсима»),
– сушеная мята,
– масло для жарки.

Приготовление

– Взбейте яйца, добавьте халлуми, виноградный сироп и мяту.

– Сформируйте из получившейся смеси небольшие шарики и обжарьте их в масле.

– Подавайте кайканас горячим. Готовые шарики можно макать в виноградный сироп.

    1            Application of terms

    1.1        These Terms apply to your use of the Website. By accessing and using the Website:

    a            you agree to these Terms; and

    b            where your access and use is on behalf of another person (e.g. a company), you confirm that you are authorised to, and do in fact, agree to these Terms

    Loss includes loss of profits, savings, revenue or data, and any other claim, damage, loss, liability and cost, including legal costs on a solicitor and own client basis

    Terms means these terms and conditions titled Terms and conditions of use

    Underlying System means any network, system, software, data or material that underlies or is connected to the Website

    You means you or, if clause 1.1b applies, both you and the other person on whose behalf you are acting.

     

    4            Your obligations

    4.1        You must provide true, current and complete information in your dealings with us and must promptly update that information as required so that the

    information remains true, current and complete.

    4.2        You must:

    a not act in a way, or use or introduce anything (including any virus, worm, Trojan horse, timebomb, keystroke logger, spyware or other similar feature) that in any way compromises, or may compromise, the Website or any Underlying System, or otherwise attempt to damage or interfere with the Website or any Underlying System; and

    b unless with our agreement, access the Website via standard web browsers only and not by any other method. Other methods include scraping, deep-linking, harvesting, data mining, use of a robot or spider, automation, or any similar data gathering, extraction or monitoring method.

    4.3 You indemnify us against all Loss we suffer or incur as a direct or indirect result of your failure to comply with these Terms.

    10.2      These Terms, and any dispute relating to these Terms or the Website, are governed by and must be interpreted in accordance with the laws of the

    Republic of Cyprus.

    Each party submits to the non-exclusive jurisdiction of the Courts of the Republic of Cyprus in relation to any dispute connected with these Terms or the

    Website.

    10.3      For us to waive a right under these Terms, the waiver must be in writing.

    10.4      Clauses which, by their nature, are intended to survive termination of these Terms, including clauses 5, 6, 7, 10.1, continue in force.

    10.5      If any part or provision of these Terms is or becomes illegal, unenforceable, or invalid, that part or provision is deemed to be modified to the extent

    required to remedy the illegality, unenforceability or invalidity. If a modification is not possible, the part or provision must be treated for all purposes as

    severed from these Terms. The remainder of these Terms will be binding on you.

    10.6      These Terms set out everything agreed by the parties relating to your use of the Website and supersede and cancel anything discussed, exchanged or

    agreed prior to you agreeing to these Terms. The parties have not relied on any representation, warranty or agreement relating to the Website that is not

    expressly set out in the Terms, and no such representation, warranty or agreement has any effect from the date you agreed to these Terms.
